It’s the summer! Let’s go to the beach, catch some rays and cook some food! This is yummy and your popularity in the kitchen will be safe on the beach. You may even make some more culinary friends!

Honey Lemon Chicken

Serves six people

chicken drum sticks (preferably organic or free range)

2

lemons (juiced)

8

garlic cloves (crushed)

2 tablespoons

manuka honey

 

lemon wedges to serve

Method
Heat the oven to 180C fan/ 200C conventional/gas 6.
Place the drumsticks on a rack over the roasting tin and season with sea salt and freshly ground pepper. Roast for 30 minutes.

Mix the lemon juice, garlic and honey. Pour over the chicken drumsticks. Roast for 15 minutes more and then baste again with the honey mixture.
Roast again for 10-15 minutes and serve with the lemon wedges.
